Pumpkin base Veg Soup |
Soup can be prepared with any one of these vegetables as base: Ash Gourd, Bottle Gourd, Pumpkin, Snake Gourd and Chayote (Chow Chow).
Ingredients (for 2 people):- Vegetable of your choice for base - 500 grams
- Vegetables for toppings - carrot, beans, capsicum, green peas all together 200 grams
- Ginger - small piece
- Green chilly - as per taste
- Tomato - 1 small/ medium size
- Chopped coriander leaves - 2 teaspoons
- Fresh Coconut milk - 200 ml
- Pepper powder - as per taste
- Salt - as per taste
Base preparation:
- Wash the vegetable for base thoroughly and cut into big pieces.
- Take an idli steamer and steam the base vegetable, ginger and green chilly.
- Once the vegetable is cooked, transfer it to the wide plate and let it cool including ginger & chilly.
- When it becomes cool, use mixer grinder and make paste and keep it aside.
Toppings preparation:
- Chop the vegetables for toppings into small pieces and steam using idli pot.
- Transfer the vegetables to a pan. Add little salt and pepper powder and mix all.
- Cover the pan with lid immediately so that vegetables can absorb the salt and pepper.
- Similarly steam chopped tomato as well in steamer for 2 minutes and transfer it to pan.
Soup mixing process:
- Transfer the base vegetable's paste to the pan of toppings vegetables.
- Add little water and heat it up for few minutes and turn-off the stove.
- Add Coconut milk and stir well.
- Add chopped coriander leaves and salt.
- Soup is ready to serve.
