Use any one of these greens given below to prepare kootu on alternate days:
- Drumstick
- Black nightshade
- Amaranth (Mulai keerai or Arai keerai in Tamil)
- Greens of any one variety (drumstick / Black nightshade / Amaranth) - required quantity for 1 person
- Sprouted green grams - 1 glass
- Cumin seeds - 1/2 table spoon
- Small onion - 5 to 10 pieces
- Garlic cloves - 1 or 2 pieces
- Green chilli - 1 no.
- Rock salt - to taste
- Grated coconut & Coriander leaves - 1 to 2 table spoons (optional)
- Soak green grams in water for minimum 4 hours on the previous day.
- Before going to the bed, wash the green grams twice and drain the excess water.
- Put that in another bowl and close it with a lid in such a way that there is a slight air flow inside the bowl.
- You will see the sprouted green grams on the next day morning.
- If you know any other alternate ways to make sprouts, please follow that.
- Put sprouted green grams, cumin seeds, onion, garlic cloves & green chilli (without cutting or removing the stem) in a vessel, add required water and cook.
- When it is half cooked, add the chopped greens and cover it with lid.
- When it is slightly cooked turn-off the stove and add salt.
- Adding grated coconut & coriander leaves are optional. It should be added only after the heat of the dish is reduced.
